Our Founders

Robert and Christine created a concept inspired by Latin and Hawaiian cuisine, directly across from UNM. They wanted to serve something quality, fast, and southwestern inspired. Poki Poki Cevicheria is a local chain that started May 4th, 2016 on Central and Harvard. When they visited California, they saw how Poke restaurants were beginning to sweep across the west coast. They immediately knew they could cook up some recipes that were made from scratch, delicious, had a southwestern flare, and paired well with over 30 toppings. Together, Robert and Christine strive each day to provide great customer service, a clean restaurant, and quality food that keeps customers coming back. Poki Poki now serves around 350-400 guests per day and is expanding locally across New Mexico. These two recommend eating the Boss Bowl!

Our Latin Consultant & General Manager, Elvis Bencomo

Chef Elvis created the Latin side to our cuisine. When he was approached prior to Poki Poki’s opening, Robert and Jon wanted to bring an Asian-Latin American fusion into the Albuquerque scene. For the three of them, just having Asian sauces and toppings wasn’t enough, they all wanted to go above and beyond. Chef Elvis created from scratch all of our Latin sauces for Poki Poki Cevicheria. He brought on his culinary talents of over 10 years to the table and created a palate of sauces that are to die for. Chef Elvis now brings to our customers years of catering experience and food truck capabilities for your events. Chef Elvis recommends the Spicy Bowl!

Our District Manager, Jon Vallez

Jonathan Vallez has a long history of managerial and cooking experience from over 10 years of being in the restaurant. When Poki Poki Cevicheria began, Jonathan was the first general manager and kicked out the recipes alongside Robert for the Asian sauces. He works meticulously each day to ensure that operations run smoothly and Poki Poki and that the staff are attending to each customer that walks in. He is the brain behind many new specials, beverages, and future project developments for Poki Poki Cevicheria. Jonathan recommends eating the Hawaiian Bowl!
